This is a great list! I especially like the squash recipes :) Ever since being diagnosed with Celiac, we've been on the 'Mediterranean diet' as well. It's so delicious, and pretty naturally GF. It's almost like you fall into it because it's so natural to eat that way when avoiding gluten. I'll bet most Gluten free dieters are on the same type of diet.
